What is tartar sauce?

Tartar sauce is a type of sauce, which derives from mayonnaise.

It consists of an emulsified sauce, That’s to say a base containing fat (butter and egg yolk), acid (citric acid of lemon juice), and aromatic seasonings (chives, dill, tarragon, onion, mustard and capers).

In the traditional cuisine, it is used to accompany baked fish, seafood, cold roasted egg dishes and vegetable preparations.
