Soup of wild asparagus


Soup of wild asparagus (4 people)


  • asparagus1 onion
  • 2 potatoes
  • 1 bunch of wild asparagus.
  • Salt


  • In a pot fry lightly the grated onion and the tender tips of wild asparagus once cut in little fragments.
  • Add a bit of salt.
  • Poor ¾ of a liter of water.
  • Cut the potatoes in thin slices and pour them in the pot. Leave all boil for 20 minutes.

How to serve it?

We can serve this soup directly in a dish or we can crush it with a mixer. Some aromatic herbs, such as rosemary or thyme, can be added optionally.
