RECIPES OF ASPARAGUS

ASPARAGUS SOUP

Ingredients for 4:

– 1 onion

– 2 potatoes

– 1 bunch of asparagus

Salt

Preparation

– Clean the asparagus.

– Cut them into small pieces. Discard the stud that is not tender.

– Fry the grated onion and chopped asparagus into small pieces.

– Add a little salt. Pour ¾ liter of water.

– Add the finely sliced potatoes and boil for 20 minutes.

Method of serving

Serve directly on the plate or, if preferred, crush it in a blender. Optionally you can add herbs such as rosemary or thyme.
