ASPARAGUS SOUP

Ingredients for 4:

- 1 onion

- 2 potatoes

- 1 bunch of asparagus

- Salt

Preparation

- Clean the asparagus.

- Cut them into small pieces. Discard the stud that is not tender.

- Fry the grated onion and chopped asparagus into small pieces.

- Add a little salt. Pour ¾ liter of water.

- Add the finely sliced potatoes and boil for 20 minutes.

Method of serving

Serve directly on the plate or, if preferred, crush it in a blender. Optionally you can add herbs such as rosemary or thyme.
