Seasoning recipe with fennel flowers
RECIPE OF VINAGRETA WITH FENNEL FLOWERS
What is a fennel dressing?
It consists of an easy dressing, which is made with the flowers of fennel (Foeniculum vulgare).
Fennel is a plant that has been consumed for many years as an aromatic herb, providing an intense, slightly aniseed flavor, which is used to make herbal cheeses, fish dishes, seafood, etc.
In this case an oil has been prepared with fennel flowers, salt and a little vinegar, to dress a salad.
How to prepare the fennel dressing?
The measurements, if made in a glass, are:

- A good bunch of fennel flowers (washed, cut, without the thick stem of the umbel)
- Olive oil until almost covered
- 2 tablespoons of apple cider vinegar
- A pinch of salt
In this case it has been used for a salad of lentils, but it is suitable for all kinds of salads.
