TARRAGON VINEGAR RECIPE

What is tarragon vinegar?

Tarragon vinegar is perhaps best known preparation with tarragon.

The following recipes have been collected from the book “Treaty of preserving food substances” (1832).

Tarragon vinegar

Ingredients:

– Fresh tarragon leaves collected in dry weather before flowering (summer)

– 500ml. white wine vinegar

Preparation:

– Dry some branches of tarragon for two days in an airy place.

– Make a decoction of 70g. of dried leaves in 500ml of vinegar, without allowing it to boil.

– Vinegar is filtered and allowed to cool.

Tarragon vinegar compound

Ingredients

– 500ml. white wine vinegar

– 30g. of dried tarragon

– 15g. dried flowers of elderberry

– 15g. of shallots

– 3 cloves

– 3 cut garlic cloves.

– A sprig of mint, savory and basil.

Preparation:

– Branches of tarragon are dried for two days in an airy.

– Make a decoction of all ingredients in 500ml of vinegar, without allowing it to boil.

– Vinegar is filtered and allowed to cool.
