POTATO SALAD WITH WATERCRESS AND WALNUTS
Wash the potatoes and steam them, with skin.
Once cooked, let cool for 10 minutes at room temperature.
Peel the potatoes and cut to medium pieces.
Wash and cut the leaves of lettuce, arugula or watercress. (If you use watercress, read this warning)
Cut the nuts into small pieces.
Arrange the potatoes in a dish or serving dish.
Put the leaves of the salad and the nuts on top.
Sprinkle with pepper and a pinch of salt. Dress with olive oil.
Serve as a main dish or accompaniment.
Optional: accompany it with homemade aioli sauce.
