Soup of wild asparaguses (4 people)
- 1 onion
- 2 potatoes
- 1 bundle of wild asparaguses.
- In a pot fry lightly the grated onion and the tender tips of wild asparaguses once cut in little fragments.
- Add a bit of salt.
- Poor 3/4 of a liter of water.
- Cut the potatoes in thin slices and pour them in the pot. Leave all boil for 20 minutes.
How to serve it?
We can serve this soup directly in a dish or we can crush it with a mixer. Some aromatic herbs, such as rosemary or thyme, can be added optionally.
